4 Healthy Indian Recipes

Hi Everyone! My name is Anjali Shah, and I'm the author of The Picky Eater, a healthy food and recipe blog. I focus on making healthy food easy, delicious, family-friendly and fun! I believe that food can be both nutritious and delicious, and that you don't need to deprive yourself in order to be healthy. I'm so excited to share 4 of my favorite healthy indian recipes with you today. Here they are!

1) Simple Slow Cooker Yellow Dal -- This recipe is a staple in my house. I make big batches of it and freeze it, so I have it on hand whenever I need it. Sometimes I'll add veggies (like cauliflower, carrots, spinach) directly into the dal to make it a one-pot meal and it works great. My daughter and husband absolutely love this recipe too!

2) Cauliflower Sabji with Peas and Carrots -- This recipe literally takes 20 minutes to make, and is the easiest way to make veggies taste great! Warm Indian spices like cumin and turmeric add a ton of flavor without adding any calories - and because it tastes so good you won't have any complaints from your family about eating their veggies!

3) Indian Faux-Fried Rice or "Khichdi" -- This is classic, Indian comfort food. Rice and lentils are stewed together with veggies and Indian spices to make an easy, healthy one-pot meal. Sometimes I like to replace rice with quinoa in this dish to give it even more protein and fiber. 

4) Butternut Squash and Chickpea Curry -- Butternut Squash in Indian food is one of my favorite combinations. The sweetness of the squash pairs so well with Indian spices and lentils, it's almost a no-brainer to put together. Chickpeas are used quite often in Indian food (e.g. Chana Masala) - and in this dish they add some protein and heartiness to the curry that is absolutely perfect.
